Mold generally can’t penetrate far into hard and semisoft cheeses, such as cheddar, colby, Parmesan and Swiss. So you can cut away the moldy part and eat the rest of the cheese. These molds are safe for healthy adults to eat.

How can you tell if cheese is bad without mold?

When selecting cheese, make sure its texture is smooth, it has no cracks or mold and that it’s not hardened or discolored. At home, refrigerate it promptly. Before you do, make sure the cheese is wrapped tightly to protect it from mold spores and odors that may live in your refrigerator.
