Greaseproof paper is exactly that – grease proof. Note: It is sometimes referred as wax paper. Baking paper is paper coated with silicon and therefore can withstand heat up to approx 230 deg. Up to this heat, it is completely non-stick and ideal for baking with sticky items such as sugar, cheese, butter, etc.

What’s the difference between parchment paper and greaseproof paper?

The crux of the difference is heat resistance! Baking parchment gets treated with a silicone coating, which gives it similar properties to greaseproof paper (non-stick, moisture resistant). However, it has the added benefit of being extremely heat-resistant.
